Production Details

The grapes are hand-harvested at optimal ripeness. After destemming, the grapes are transferred to stainless-steel tanks, where cold maceration takes place at a temperature of 45 -50°F. Fermentation lasts for 12 to 15 days.

We use an innovative low temperature vacuum distillation process to remove the alcohol while preserving 100% of the natural aromas and flavors from the original wine. The tannins and flavors are slightly impacted as the alcohol is removed.  We dilute the wine with water to compensate for alcohol lost and add natural flavors to complement the existing flavors of the wine.

  • “With rich red berry and woodsy notes, the Missing Thorn red is well-balanced and layered, with a velvety finish. It goes wonderfully with strong cheeses and charcuterie.”

    Wine Enthusiast

  • “The Missing Thorn wines, made by Mr. Pott in California, were also quite good…The red, made with dealcoholized malbec, was likewise balanced and refreshing.”

    The New York Times

  • “A small addition of black currant juice gives this alcohol-free Malbec from star winemaker Aaron Pott and vintner Stephanie Honig a rich, juicy flavor; fans of Napa Valley Cabernets will like this one. .”
