Orchard Matinée
Riesling meets chamomile, citrus, and a whisper of buttered sugar for a soft, cinematic pour.
Ingredients:
• 2 oz Triple-Steeped Chamomile Tea
• 0.5 oz Fresh Lemon Juice
• 0.5 oz Popcorn Syrup
• 3 oz Missing Thorn White – Riesling
• Butter sprinkle sugar rim for garnish
• Baby’s breath for garnish
• Kettle corn popcorn for garnish
How to make it:
1. Prepare a rocks glass with a butter sprinkle sugar rim.
2. Add chamomile tea, lemon juice, and popcorn syrup to a shaker with ice.
3. Shake until well chilled.
4. Add Missing Thorn White – Riesling to the shaker and briefly integrate.
5. Strain over fresh ice into the prepared rocks glass.
6. Garnish with baby’s breath and kettle corn. Serve immediately.
Butter Sprinkle Sugar
Combine 28 oz Granulated Sugar and 4 oz Butter Sprinkles in a Batching Vessel.
Whisk until evenly distributed and no visible clumping remains.
Transfer into service ready vessels, label, date, and store in a dry place.
Triple Chamomile Tea
Bring 33.8 oz water to a full boil. Remove from heat and add 0.8 oz loose Chamomile
tea. Cover and steep 10 minutes, stirring gently halfway through for full extraction. Fine strain through a chinois or fine mesh to remove all solids, pressing lightly to capture remaining liquid, then discard solids. Allow to cool to room temperature. Portion into service ready container, label and date, and store refrigerated until service. Shelf life: 3 to 5 days.
