Midnight Earl

Midnight Earl
A rich, berry-forward sour built on Missing Thorn Red, lifted with citrus and finished with a slow Earl Grey float.
Ingredients:
• 1 oz Pomegranate Juice
• 0.75 oz Blackberry Purée
• 0.5 oz Fresh Lemon Juice
• 3 oz Missing Thorn Red — Bordeaux Blend
• 1 oz Triple-Steeped Earl Grey Tea (Float)
• Mint sprig
• Blackberry
• Pomegranate seeds
How to make it:
1. Add pomegranate juice, blackberry purée, and lemon juice to a shaker with ice.
2. Shake until well chilled.
3. Add 3 oz Missing Thorn Red to the shaker and briefly integrate.
4. Strain over fresh ice into a rocks glass.
5. Gently float triple-steeped Earl Grey tea over the top.
6. Garnish with mint sprig, blackberry, pomegranate seeds.
Triple Earl Grey Tea
Bring 33.8 oz water to a full boil. Remove from heat and add 0.8 oz loose Earl Grey tea. Cover and steep 5 minutes, stirring gently halfway through for full extraction. Fine strain through a chinois or fine mesh to remove all solids, pressing lightly to capture remaining liquid, then discard solids. Allow to cool to room temperature. Portion into service ready container, label and date, and store refrigerated until service. Shelf life: 3 to 5 days.
