I’ve always believed Valentine’s Day gets a little overcomplicated.

Too many rules. Too much pressure. Too much emphasis on doing the most—instead of just being present. These days, what I want from a Valentine’s celebration is simpler: a table I actually want to sit at, food that invites conversation, and wine that lets the night unfold without rushing it along.

That idea—celebrating without compromise—is why we created Missing Thorn in the first place. Wine should support the moment, not hijack it. And on Valentine’s Day, especially, clarity feels like a gift.

This is how I like to build the evening. Not a rigid menu. Just a natural progression. Sparkling. Rosé. Red. A pairing flight that moves with you.


Start with Sparkle

I almost always start Valentine’s Day with Sparkling. The pop of the cork alone changes the energy in the room—it signals that something worth paying attention to is happening.

Rosé is, quietly, one of the most useful wines you can open on Valentine’s Day.
